I added few Vietnamese words, more than cuts in picture above

  • Head: Thủ Lợn
  • Ear: Tai
  • Cheek: Má
  • Boston Butt (Pork Shoulder/Butt): Nạc Vai
  • Picnic Shoulder (I would say it is picnic ham): Giò Nạc
  • Belly: Ba Chỉ
  • Rib: Sườn
  • Loin: Thăn
  • Fatback: Lưng
  • Rump: Mông
  • Leg: Chân
  • Hock: Giò gân & Giò móng

CHICKEN CUTS – THỊT GÀ

This can apply to other types of poultry as well, such as duck, goose…

  • Breast fillet without skin: ức phi lê, không da
  • Breast, skin-on, bone-in: ức, có xương, có da
  • Drumette: âu cánh gà
  • Drumstick: đùi tỏi
  • Feet: chân gà
  • Forequarter (breast and wing): tỏi trước (cánh và ức)
  • Gizzard: mề gà
  • Heart: tim
  • Inner fillet: thăn trong
  • Leg quarter with back bone: đùi 1/4
  • Liver: gan
  • Mid-joint-wing: cánh giữa
  • Neck: cổ
  • Tail : phao câu
  • Thigh: má đùi
  • Whole leg: nguyên đùi
  • Wing tip: đầu cánh
